Bill held a pivotal position on the management opening team of Mallards Restaurant for Dan Costa, where he utilized his extensive expertise in restaurant, bar, lounge, catering, and event management. Notably, he demonstrated his capabilities while working with the San Francisco Giants at Candlestick Park. In this role, he ensured the delivery of top-quality hospitality services, meeting the rigorous standards set by the Bay Area's premier sports brand. Bill's effective communication and collaboration with high-profile individuals, including legends like Bill Walsh, Will Clark, and Tommy Lasorda, underscore his exceptional interpersonal skills.

During the October 17, 1989, San Francisco earthquake, Bill managed a venue that was the only business open between San Francisco and San Mateo. It was overflowing with guests, and Bill maintained a safe space for these distressed guests to gather. The venue and operation were broken out into a 300+ seated dining room, a private dining room for 60+ guests, a 200+ bar, lounge, and seafood bar with a patio for 40+ guests, and an outside catering operation servicing the San Francisco Giants and away teams.
